Catfish fillets with Cornbread Stuffing

1 to 1/2 lbs catfish fillets
2 Tablespoons butter or Margarine
1 medium cooking apple, cored and chopped
1/2 cup sliced Celery
1 (6oz) pkg Seasoned Cornbread Stuffing mix
seasonings, paprika, salt and pepper, to taste
Rinse and pat dry the fish with a paper towel. Season Catfish with the seasonings. In a large nonstick skillet, cook fish in hot butter for 3 minutes, add chopped apple and celery. cook for 3 ro 4 minutes more or until fish flakes easily when tested with a fork.
Remove catfish, and keep warm. Add 1 1/2 cups water to the same skillet, bring to a boil. Stir in dry stuffing mix and seasoning packet that sometimes comes with the mix. cover and let stand 5 minutes
serve the stuffing with the fish.
