Hummingbird Cake

 
Hummingbird Cake
"From Our Home to Yours"
Ozark First Church of the Nazarene"
2004

3 Cups All-Purpose Flour
2 Cups Sugar
1 teaspoons Salt
1 teaspoon Soda
1 teaspoon Cinnamon
3 Eggs, beaten
1 1/2 cups Salad Oil
1 1/2 teaspoon Vanilla
1 8 oz can Crushed Pineapple, drained
1 cup chopped Nuts
2 cups chopped Bananas
Mix by hand. Combine dry ingredients, add eggs and salad oil, stir until well mixed. Add vanilla, pineapple, bananas and nuts. Spoon batter into large greased and floured sheet pan. Bake at 350 F for 40-50 minutes
Icing
Combine:
1 box confections Sugar (1 lb)
1/2 cup Margarine
8 oz Cream Cheese
1 teaspoon Vanilla
Sprinkle 1 cup chopped Nuts on top of icing.

Howdy April 30

Howdy.... And good afternoon, We had fun yesterday morning after Jerry got rained out. We drove to Burlington, NC to find Best Buy. They didn't have what we were looking for. I found a "Michael's" though and bought a few things. I think the local Hobby Lobby has a better selection, and was a bit disappointed. It was a nice drive though the country side from here to there and that made the trip nice. I am looking for a PDA.. something I can keep a list on and carry with me from place to place. So if I pick up material I can make a note why I picked it up and what I intend to make with it. Or a shopping list. I just can't seem to remember everything I put on a list as well as I use to. I know, I can use a note pad and pen, but my hand writing is not getting any better with age.
yesterday was very dark at times but after 10 am there was very little rain, Today, is just as dark and just as dreary but no rain (yet)
The dogs ended up spending a lot of time in the Kennels and I had a time of it with them when I took them out for the evening. They played and pee' d then wanted back in the camper and Jerry put them back into the kennels (again) I took them back out and took them outside (again) They had a lot of fun playing together and getting all that pent up energy out of their systems. The cats are in and out all the time.
From the kitchen... Dinner will be Salad, Forman Grilled Pork Chops, and noodles.
A Recipe
Magic Bullet Vegetable Lunch (today's lunch)
You put in to the cup how much you want. No measurements (aka Rachael Ray style)
In the tall cup place:
shredded carrots
Broccoli florets (I used two, trimmed and cut smaller)
Mushrooms
Baby spinach leaf
Green Pepper
Onion
Put on steamer top and then Microwave for 2 minutes, Remove and pour in V8 juice to the bottom of the threads of the top. Replace steamer lid and Microwave for 3 more minutes. I put a 1/2 cup of frozen rice in the microwave to thaw while this is cooking for 3 more minutes. Remove cup, check rice to see if it's hot, if not microwave 1 to 2 more minutes.
Put rice in bowl and mound up in the middle. Whirl the vegetables with the cross blade for a few seconds. Until all is blended. Pour over rice and serve. Make one large bowl of something good for lunch. You could share this by using 1 cup of rice divided between two bowls and still both bowls will be full.

A few plans for today... I still need to finish cleaning the kitchen. Then make the beds and clean the bathroom. (I'm really slow on doing things today)
A few plans for the rest of the week... Clean up the camper and keep it clean. Take a few walks, hope to make a craft or two, take a couple of pictures with my camera.

Howdy... April 25

 
Howdy.... I hope you have been having a good day. It's a very pleasent day here in Virginia. There is only a slight breeze and the tempature is just perfect. Although we had a few clouds in the sky yesterday, today is clean. I would love a few more days just like today. Of course we need rain, but over night rains would be perfect. My walk today included Macon. The campground owner's boy and his cousin (almost the same age) were pushing a lawnmower up here in our area and I asked them to stop and let me let Macon check it out. Macon tried to stay behind me. He finally came around and got close to it but would not touch it or let either of the boys touch him. When a lady with her three yappy dogs came out it was too much for Macon so we moved on away from the lawnmower and the yappy dogs down to the lake. I let Macon sniff around when I saw another lady with two dogs, closer to his size comeing down the hill. I asker her (Loudly) which direction she wanted to go. She wanted to go to the right, and I told her I would go left, and that I didn't trust Macon around dogs the size of hers and she said her lab mix has the same problem. So now I am wondering if it's a "Lab" thing or not. Anyway. we walked down to the first park bench. where I rested for a little while before going on down to the second bench and rested again. Macon left me a "gift" which I bagged up in a bag, then bagged into another bag and tied to his collar. He wasn't happy with having to carry it but he soon accepted that he was going to carry it on his collar. Barney was barking while we were walking back and I sat outside until he finally stopped barking and was quiet for a little while. Barney seems to have problems when Macon is not around. He does better when I take Rocky for a walk. The cats were all waiting for me to feed them this afternoon. They were even pushing my hands, trying to make me open the cans faster.
From the kitchen... Hamburgers, Salad and Fries. Not sure what, if anything we will have for dessert.
I am hearing... I have been watching old "Person of Intrest" shows all day long. I have to catch up with a few shows, to make room for more shows. Jerry thought he saw that "The Good Wite" was ending and told me. I think he mis read the note as it's the season ending not seires ending show.
I am wearing... Dark Grey sweat pants and a blue printed top.
I am reading... The Bible (one chapter ,Numbers 9) and Emails
I am thinking... How nice it will be for Jerry to have Sunday off this week. Of course we will have lots to get done but I hope he can get some rest in the afternoon.
I am thankful for... wonderful weather and well behavied dogs.
I am hoping... to remember to walk every day. I skipped yesterday's walk and found I couldn't go further than I did two days ago. I need to do better than this every day.
I am creating... A card to send to Beth. I cut everything out two days ago, but then mis-placed it until I did some cleaning in the living room area. After I send this off, I'll glue it all together and have it ready to send out tomorrow.
One of my favorite things... sitting by the lake, just enjoying the day.
A few plans for the rest of today... finish the card for Beth. Make dinner. Take the dogs out one more time.

Howdy.. April 23

Howdy....  I meant to write a note yesterday, then plum forgot about it.  This mooring was not as cool as it was yesterday morning, Thank goodness.  I didn't need to use the oven to help warm things up in here. It helps that I remembered where one of our heaters was stored. I found the one that Hubby was looking for, when I went to find my mixer. Go figure. I finally found my mixer, not where I usually put it.  Now I have got to find a better place to keep it.  I made an Oreo Cookie no-bake dessert for us for tonight. I added just a bit of mint flavoring and a bit of green tint to it, turning it into a Grasshopper pie. Hubby loves Grasshopper pie.  Here in a bit, I'll have to take the dogs out, then go for my walk. I need to take my camera with me. I'm thinking I'll go the other direction, just to change things up a bit. I think I'll take Barney with me on this walk.
 
Outside my door ...  The trees are finally Green !!. and the slight breeze is just want we need today.  I am seeing a golden glow on all the trucks and cars around here. They are covered in pollen.
The Dogs ...  have been sleeping on the beds. Barney played ball this morning, dropping the ball on my foot, over and over. He finally got tired of doing that. Rocky and Macon had a good ol Wrestlin match when I had them out this morning so everyone is now sleeping (recharging their batteries) and will be ready for round two here in a bit.
The Cats ... are wondering when I'll be feeding them. Each one has come up and looked in the door at me. I guess they think that will make me get up and take care of them faster.
 
From the kitchen...  I have some chicken strips marinating in Zesty Italian Dressing and will grill them for dinner, and I'll made some noodles to serve them over. Of course we will have salad and the dessert I just made up.
I am hearing... Of course I have the T. V. on. It's always on. I'm hearing a crow "calling" outside, and the breeze in the trees. 
I am wearing... light gray cut off sweat short, red and blue splattered T-shirt. I think I'll be changing into something warmer before Hubby gets home, though.
I am reading...  I'm "between" book at the moment. I did read Numbers 7 from the Bible today. Reading how much each of the 12 tribes gave to the service of the moveable temple and the Ark of the Covenants. One tribe per day for 12 days.  (yeah, boring)
I am thankful for...  Being able to open the door and vents and let the camper air out for a bit. 
I am hoping... That there are no more changes made to Hubby's hours.  He's back to working 10 hour days, starting at 6:30 in the morning and will have Sunday off.. at least until they change their minds again, anyway.
I am creating... I made a card to send to my Grand daughter in Tennessee to give to some one,  two days ago. I'm working on a card to send to my younger daughter. I hope to finish that up after I take my walk this afternoon (here in a few minutes)
One of my favorite things... making dessert. I know we don't "Need" dessert, but it's nice to have from time to time.
 
A few plans for today... finish up a card I cut the elements for, yesterday. Walk to the park bench and back. Sit outside with the dogs for a little bit.
A few plans for the rest of the week...  I want to make more cards this week.  I have yet to start a top I have been wanting to cut out for some time, now. I am working on doing more around the camper before I start reading my emails. I need to get house work done before I read emails or I get caught up in reading them and forget to get it all done before it's time to make our dinner in the afternoon.  The computer can really be a big time stealer, for me.

calendar where all activities are written down. A different
color pen can be used for each member of the household.

1 pound box Graham Crackers
2 small boxes Instant French Vanilla Pudding
3 1/2 cups Milk
1 (9 oz) container Cool Whip
Frosting:
1 can Chocolate Frosting
 
Butter bottom of a 9 x 13 inch pan. Line with whole Graham Crackers. Mix pudding with milk. Beat at medium speed for 2 minutes Blend in Cool Whip. Pour half of the mixture over the Graham Crackers. Put another layer of Graham Crackers over the pudding. Pour remaining pudding over and then cover with more Graham Crackers. Chill for 2 hours before Frosting.

1 pound Butter
3 Cups Sugar
10 Eggs
3 Cups Sifted Flour
Cream Butter and Sugar thoroughly. Add eggsalternately with flour, beating well after each addition. Pour into well greased and floured tube cake pan. Bake approximately 1 hour and 30 minutes at 325F.

Howdy....April 18

Howdy.... and Good After noon. Well. Jerry was told to expect to work 12 hours a day, 7 days a week until Memorial Day.. I doubt he'll work each and every day of that. He's just going to get so tired that he will have to take a day off even now and then. I thought there was a law about but he said not in Virginia. I may just have to check on that to be sure though.
After asking Jerry to buy his breakfast out yesterday, I went to bed early enough that I could get up and make his breakfast this morning and take the dogs out. Changing everything by just 1/2 a hour sure does throw out my timing.
It's been a very pleasant morning and I have had the dogs out for a bit. Soon it's time to take them out again .I think I'll take out my Kindle and read while they are doing what ever it is that dogs do. (sniff, snap at flying bugs, play with each other ect.) I'll feed the cats at the same time as I take the dogs out, I've already put some dry food out this morning for them. We have a good change of storms this evening so I'll not refill their bowl until after the rain and storms go away.
I've been keeping the camper a bit cleaner than I did over winter. With the door open It just feels fresher in here. It's easier to make the beds first thing after I get up and know I'm going to stay up for the rest of the day. I do go back to bed after Jerry leaves for work for a couple of hours.
From the kitchen...
Lunch. Magic Bullet Speedy Guacamole on crackers
Dinner. I have a Tenderloin I need to roast. I' hate to start the oven in the afternoon when it's hot but this is thawed and I need to take care of it today. Hum.. what all goes on a Philly Sandwich?

I am hearing... The T. V. , the fan blowing, People talking a few lots from us. (they are new) and a few birds are about.
I am wearing... Shorts and a light blue top
I am reading... Bible (Numbers 3), I need to pick out a book to read while I have the dogs outside here in a bit
I am thinking...
I am thankful for...
I am hoping... That those who set the hours of this job, rethink and change them back to 10 hours a day.. I'm sure they are looking at a bonus that they get if the job is done before it's due (and they don't ever seem to share that money with those who do the work) but more and more of the workers are leaving to go to other jobs because the other jobs are offering more money and not pushing for so many hours per week. Over time should not be Mandatory, but at this job, it is.

Crafts 'n things Craft of the Day

What better way to greet guests than with a smile? This easy-to-paint, smiling flower welcome mat is a great way to add a touch of spring to your outdoor décor.

Materials

  • Green doormat, 18"x24"
  • DecoArt Patio Paints: Cloud White, Sprout Green, Petunia Purple, Wrought Iron Black, Citrus Green, Fuchsia, Pansy Purple

Tools

  • Round scrubber paintbrushes: sizes #0, #4, #6, #14
  • Poster board, 18"x24"

Basic Supplies

Directions

STEP 1

For stencil, print and cut out patterns. (Note: The blue word "patterns" is a link. To access these patterns, select the link, then download and print patterns.) Fold poster board in half. Trace patterns onto poster board; cut out.

STEP 2

For flower, center stencil on mat, aligning bottom edges. Use #6 to stencil petal edges Petunia Purple. Use circular scrubbing motion to force paint into grooves in mat. Remove template. Use #14 to fill in petals with Petunia Purple. While still wet, use #14 to paint Cloud White along petal edges and Pansy Purple along flower head edges. Use #6 to paint flower head Fuchsia. While still wet, use #6 to paint flower head edges Cloud White.

STEP 3

Use #14 to paint cheeks and nose Pansy Purple and to add Cloud White highlights. Use #0 to paint eyes, smile, and border Wrought Iron Black.

STEP 4

For border, position leaf stencil as desired. Use #4 to stencil edges Citrus Green. Paint leaves Sprout Green and veins Wrought Iron Black. Add Fuchsia and Petunia Purple mini-flowers and dots around border as desired.

Classic Cheesecake

 
Classic Cheesecake
"From Our Home to Yours"
Ozark First Church of the Nazarene"
2004
Crust:
1 cup Graham Cracker Crumbs
3 Tablespoons Sugar
3 Tablespoons Butter or Margarine, melted
Filling
5 (8 oz) Packages Cream Cheese, softened
4 Eggs
1 Cup Sugar
3 Tablespoons Flour
1 Tablespoon Vanilla
1 cup Sour Cream
Preheat oven to 325 F. (300 F if using dark, non-stick pan)
Combine Graham Cracker crumbs, 3 tablespoons Sugar and butter. Press firmly onto bottom of 9 inch spring form pan. Bake for 10 minutes.
Mix Cream Cheese, 1 cup Sugar, flour and Vanilla with electric mixer or medium until well blended. Add Sour Cream, mix in well. Add eggs, 1 at time, mixing on low after each addition until just blended. (Over-stirring can cause top of cheesecake to crack) Pour over crust.
Bake for 1 hour 10 minutes or until center is almost set (do not open oven door) Loosen cake from sides of pan with a knife, but do not unlatch pan side for 1 hour. Cool before removing side of pan an chill at least 4 hours before cutting. Can chill over night before cutting.

Howdy....April 17

 
 
Howdy.... Jerry's hours have changed. Now we have to get up even earlier. So much so that this morning I just couldn't get myself up and make his breakfast at 3:30 am. He was okay with buying breakfast on his way into work. He's now working from 6:30 am to 6:30 PM which means that he won't get home until after 7;30.. and that's way too late for me to eat so he will buy his dinner on his way home from work. We are both hoping that this does not last long. Usually there isn't enough done the last two hours of 12 hour days to make it worthy of keeping everyone on the job that long. And they are also talking of working both weekend days again this week. Yes, there are laws about having to have at least one day off out of every 14 but it's not enforced much in most states, unless there has been an accident. But anyway.. Jerry is leaving earlier and getting home later.
I am very surprised that I am not wanting to do any sort of gardening this year. Usually I have an "itch" to get my hands dirty and plant a few seeds each year, But not this year at all.

Outside my door ... It's been cloudy all day long, but so far no rain. (it's 2 PM) I am hoping in a way that we do have a thunderstorm so that Jerry can get off work early. All the trees are now set with new leaf and it's so nice and fresh outside (not counting the pollen) and I love sitting out side with the dogs when it's like this.
Whew, what a walk. First I took all thee dogs out. Macon was having fun snapping at bumble bees. He has yet to catch one. Rocky kept chewing at grass and I would stop him each time I saw him doing that. Then the neighbors came home, emptied what they had in their car, Barney "lost" his ball and started barking for it, and Macon barked because Barney was barking. I finally got them to shut up and went and got Barney's ball for him. Then the brought out their dog, on a lead. I had my dogs up short to me. and made them each sit. and they watched her. I brought the dogs in, untied the leads from the camper (It's just long enough to do that. Brought Barney back out (still on his lead) Had to go back after we started because Macon wanted to bark as us because he wasn't going. Put him in a kennel and Rocky as well, left the door open so they could enjoy the breeze.. that didn't work so I had to go back again and close the door. Off Barney and I go for a short walk down by the lake. We walked along the lake and Barney decided it was time for a swim.. he's short so a quick hop in puts him in over his head. and off he swims to the end of the lead, turns around and come back. One of the cats joined us, Barney jumped in again, had a fun time swimming around and more fun getting the cat wet when he shook off the water. Of course the cat ran off. I had to sit at one of the un-used tables to catch my breath (it's all up hill from the lake) and Barney got to sniff around a bit. Back up to the camper where Barney shook off one more time. Now I have him in the kennel to finish drying, before he's allowed out and into the rest of the camper.
I have noticed that my neighbor is letting their dog out more and more, not on a lead. I've been watching that they are not out when I take my dogs out but I'm beginning to think I'm not going to care and just take them out any time I need to and not look to see if they have her out.. But I really don't need the stress of trouble, here.
The campground rules state that all dogs be on leads when outside of their camper.
I am not breaking the rules, they are. and more so each day.
The Cats ... have been fed and one followed me to the lake (it's not that far)Mewing at me that I left her behind and she didn't want to be left behind she wanted to walk with me.
From the kitchen...
I have a crock pot of red beans warming up, I'm thinking of turning them in to a bean dip with a bit of pepper and onion in it.
I'm thinking of making this, with Jalapeno peppers and a bit of dill relish as well.
Cream Cheese Schmears
"A schmear is whipped cream cheese. The magic bullet recipe book suggests adding any of the following into the basic mix. Chive, sun dried tomatoes, olive oil, Dill, red onion, scallions, basil or lox. You could try this with some cranberry sauce mixed in - about 2 tbsp worth"
Ingredients
1 cup cream cheese
2 tablespoons milk
Directions
Place the cheese, milk and any additions in the tall cup.
Fit the cross blade and blend until smooth.
Serve as a dip, celery filling, sandwich filling or jacket potato filling.
I am hearing... the .T. V. (as always) the fan blowing back and forth to keep the air stirred up. a few birds singing or calling for mates.
I am wearing... Maroon Cut of Sweat Pant shorts and a splattered T-shirt that Bailey made me last year when we got to visit.
I am reading... I'm between books right now. I did read Numbers chapter 2 this morning.
I am thinking... There is a job in Roxboro N. C. That may be hiring in less than two weeks that Jerry had been checking on. I hope that, if he gets on that job, the hours will stay consistent from week to week and not all over the place like it is at this job all the time.

I am thankful for... Our younger daughter getting moved with no major problems.. A bit of spilt paint and one ruined bath towel (it was used to mop up the paint) and some scratches on the baby's dresser, but it can be re-painted soon. They are in a large place down in the city and can get around much easier there.
There are a few things still to move but "L" will take care of those either tonight or tomorrow. The T. V. that they just mounted to the wall a couple of weeks ago has to be moved and she already knows she can't help with that. It's over her head She called me twice yesterday, and posted a picture of her daughter sleeping in the recliner. The move was no stress on her, and "B" was stressing out that it would be.
B's new place is almost double what she's moved out of. Two Bedroom, Two bath, dinning room (more like an alcove but it's right off the kitchen with a pass through window between the sink and that area.) Deck with a sliding glass window. I have already suggested she put some stickers on the glass at her and Heathers' eye level. She has to get some tool and take Heather's bed apart ( they didn't do that to move it, just put it on the trailer and then piled stuff on the bed) So she can put the bed in the smaller bedroom.
I think "B" will like it there, at least for now. All the convenient things of City living are right close by.
There is a small church close by that she said she wants to check out. There is a library branch close by, as well. Close enough that she can put Heather in the stroller and walk there and not have to get the car from "L".
I am hoping... That this job quits Jacking around with the days and hours of this job. It's getting un-settling to not know from week to week how many hours and what days he may have off.

Chocolate Upside-Down Cake

 
Chocolate Upside-Down Cake

1 box Devil's Food Cake mix
1 cup Brown Sugar, packed
1/4 cup Butter or Margarine, melted
1 cup chopped Pecans
6 oz Chocolate morsels
3 oz Coconut flakes
Mix melted butter with brown sugar and pour into 13 x 9 pan. Sprinkle nuts and coconut over brown sugar mixture. Prepare cake mix according to box instructions, Add chocolate morsels to mix, the pour into prepared pan. Bake according to instructions on cake mix box.

Carrot Cake

Carrot Cake

2004
2 cups sifted Cake Flour
2 cups Sugar
2 teaspoons Baking Powder
2 teaspoons Baking Soda
1 teaspoon Salt
1 1/3 cups Oil
2 teaspoon Cinnamon
4 Eggs
3 cups grated Carrots
 
Preheat oven 350F.
Sift Cake flour, salt, baking soda and baking powder together.
In a separate bowl, Cream Sugar and eggs, then add oil. Add flour mixture to creamed mixture. Add cinnamon. Stir in grated Carrots with wooden spoon.
 Pour into two 8 to 9 inch cake pans that have been oiled and place a round of wax paper in the bottom of the pan. Place in preheated oven and bake for 35 to 40 minutes. Remove from oven and cool on a rack for 10 minutes, Turn out on racks and cool completely before icing. Ice with cream cheese icing.

Black Forest Cake

Black Forest Cake
 
"From Our Home to Yours"

2004
 

1 box Chocolate Cake mix, Prepare and bake according to directions on box)
2 cans Cherry Pie Filling
3 cups Heavy Whipping Cream
2 teaspoons Vanilla
1/3 cup Confectioners' Sugar
 
After baking cake, allow to cool completely. Split each cake in half horizontally. Crumbed one half layer into bowl ,set aside.
Beat cold whipping cream and confectioners' sugar in a large bowl until stiff peaks form. Add vanilla and mix in. Reserve 1 1/2 cups whipped cream for top.
Place one cake layer on serving plate. Spread with 1 cup of whipped cream. Top with 3/4 cup cherry pie filling. Place the second cake layer on top and repeat layers of whipped topping and Cherry pie filling.  Top with third cake layer.
Frost cake sides with remaining whipped cream, pat gently with reserved cake crumbs. Spread reserve whipped cream on top of cake. Spoon remaining Cherry filling over top of cake.

Howdy...April 15

 
Howdy.... I've been doing a few things around the camper then reading a little bit then doing a bit more around the camper. I have all the but living room done and I'm working on that. That means the beds are made, the dishes done and the counters are cleaned up. I've taken the dogs out a couple of times. Watered my plants and have just now fed the cats their canned food.
Today has been one of those early Spring days of clouds, cool, Bright Green against Dark wood colors and I've had to open then close, then open again the door. It's rained a bit, then just stayed cloudy and I started off the day in sweat pants, but around 10 am, I spilled my cup of coffee on me and I cut off a pair of sweat pants to make shorts that I put on. I will need to re cut them a bit as the front is a bit longer than the back of them are.
I've had the dogs out a couple of time but not either time.. It's just to dreary to want to stay outside long. Barney has been playing with his ball as he usually does. Dropping it, picking it up and dropping it again over and over. until it rolled under the couch out of his reach. He then laid down and stared under the couch, waiting for it to come out again.
Dinner tonight will be Salad, Steaks, and mashed potatoes. I'm thinking of making Magic Bullet Speedy Guacamole
About This Recipe
"This is from the Magic Bullet Cookbook. Posted in response to a request on the forum. The quantity is an estimate. The book doesn't give the servings but measuring with water, the small cup holds about 1-1/4 cups."
Ingredients
2 avocados
2 -3 garlic cloves
1 dash fresh lemon juice (1 squeeze) (optional) or 1 dash fresh lime juice ( 1 squeeze) (optional)
1/4 cup onions
4 -6 cherry tomatoes ( 1/4 cup)
1 -2 sprig fresh cilantro
1/4 of a jalapeno peppers (optional)
salt and pepper
Directions
Scoop out avocado meat, discarding the pit. Place in the short cup.
Place the remaining ingredients, in the order they are listed, into the short cup. Your may need to cut up the tomatoes to make them fit.
Twist on the cross blade and place the cup onto the power base.
Give it 3-4 quick pulses until all the ingredients are chopped and blended.
Make sure to apply a bit of counter-clockwise pressure to the cup to keep it from locking on. And you may need to use the tap technique to make sure everything gets completely chopped.
I am hearing... Just now on the T. V. the explosions at the Boston Marathon. Why do people do this? What did any of these people who run do to have this happen to them? (sigh) What ever happened to "Live and let Live"? This will never make sense to me. No gathering of people will be safe, I suppose without everyone being treated like they are out to harm someone else.
I finished reading Dragon's Time. I had a hard time keeping up with it at times. but it was another great Dragon Rider's book by both Anne and Todd McCaffery.
I read a craft today that I want to try out very soon. It's making Sun catchers by melting plastic beads in either cake pan or muffin tins. I will have to go find my beads and try it out.

Better Than Almost Anything Cake

 
Better Than Almost Anything Cake
"From Our Home to Yours"
Ozark First Church of the Nazarene"
2004

1 box German Chocolate Cake Mix
Water, oil and eggs according to directions on cake mix
1 can Sweetened Condensed Milk
1 jar Caramel, Butterscotch or Fudge Topping
1 (8 oz) Tub Whipped Topping, thawed
1 bag Goffee Bits or Chips
Pre-heat over to 350F. Mix and bake cake as directed in a 9 x 13 pan. Cool for 15 minutes. In warm cake, poke holes ever 1/2 inch with wooden spoon, Wiping handle occasionally to reduce sticking. Drizzle sweetened condensed milk evely over cake. Let stand until milk has been absorbed into cake. Drizzle with caramel topping. Cover and chill about 2 hours or until chilled. Spread Whipped Topping over top of Cake. Sprinkle with toffee chips. Cover and keep chilled any remaining cake.

Howdy.... April 11

Howdy.... And good afternoon. Well it's just past 12 pm so it's afternoon. Ive gotten my house work in the back done (beds make, bathroom cleaned up) the dishes done, cooked some rice, some in the freezer and some for my lunch, made lunch (eating between typing in my log) and have taken the dogs out for a morning romp. That didn't last long, they got bored quickly.
It's mostly sunny today. the clouds are helping to keep the camper a bit cooler than it was yesterday. We are suppose to have thunderstorms this evening and over night.
Strips kept coming in and going out last night. I think he was looking for his sisters. I did see all three cats this moring. I saw one of the cats sleeping in one of our chairs last night when I closed the door.
From the kitchen...
Lunch:Magic Bullet Brisk Broccoli Soup over 1/2 cup of rice. Yummy
Dinner: I have two steaks thawing in the fridge. I'll fix instant potatoes to go with that along with our salads. Not sure what dessert will be just yet.
I am hearing... The TV. oh, it was so nice to wake up to birds singing htis morning. When we put the air conditioner in the window I'll miss that. I have a fan blowing in the livingroom and it's going back and forth so the noise keeps changing pitch as it blows on me then off across the room.
I am wearing... Black Sweat pants and my dark shirt that has horse on as if I'm sitting on it's back. About as close to riding a horse as I can get, any more.
I am reading... Dragon's Time by Anne and Todd McCaffery. I'm a bit confused but I have missed a few books so I'm trying to catch up.
I am hoping... That Jerry does not have to work this Sunday. We need to do laundry at the laundry matt, and I love eating breakfast out with him at Golden Corral.
I am creating... I found the white material and the pattern I want to make a top out of. I finally have the two, together. I need to iron the material this afternoon and maybe I can get it pinned and cut out, as well.
One of my favorite things... is watching the dogs play with each other each morning. They just have so much fun when they can stretch out a bit and move around without bumping into something in the camper.

A few plans for the rest of today.. make dinner, start my top. Let the dogs play outside this afternoon, Maybe walk Barney down to the lake and back

Apricot Nectar Cake

1 Pkg Yellow Cake Mix
1/2 cup Salad Oil
1 Pkg Apricot Gelatin
Apricot Nectar
6 Eggs
2 Cups Powdered Sugar
Mix cake mix and gelatin. Add oi, 3/4 cup Apricot Nectar and eggs. Beat well. Pour batter into tube or bunt pan. Bake at 350F for 1 hour or until cake tests done. Combine powdered sugar and 1/3 cup Apricot nectar, pour over warm cake.

Apple Cake

 
Apple Cake

2004
2 cup Sugar
1 cup Vegetable Oil
3 Eggs
2 teaspoon Vanilla
1 1/4 cup Pecans
1 teaspoon Salt
2 teaspoon Apple Pie Spice
2 cups Peeled Apples
3 cups All-Purpose Flour
1 teaspoon Baking Soda
Combine sugar, oil, egg and vanilla in a bowl. Beat for 1 minutes. In a seperate bowl, combine flour, baking soda, salt and apple pie spice. Gradually add flour mixture to the sugar mixture, beat on low speed until mixed. Stir in apples and pecans. Spoon into greaste and floured bundt pan. Bake at 325F for 1 hour and 30 minutes. Cool 15 minutes and remove from the pan.

Howdy...April 10

Howdy.... And now Good afternoon. It's another HOT day in Virginia. Yesterday was almost as hot. Tomorrow will be much cooler. I am not Complaining about it. I'm just saying... "It's Hot". We have a few high fluffy clouds while Beth has Thunderstorms last night in her area. I think we will get those here Thursday night into Friday morning. That will help cool us off to the more normal highs of low 70's. It's so strange to have it to warm and the trees still don't have many leaf's on them yet. I am seeing more green but they are not covered in leaf's just yet. It's hard to believe that April is 1/3 Rd of the way over with already. Easter being in March just always throws off my Spring thinking.
I've gotten just about all my housework done. I have to still sweep the floor and clear off the table and, if Barney is lucky, I'll try to get his balls out from under the couch again. The cats like that the back window is open so they can come and go as they please. I still feed them out at the table but I'm wondering if Jerry will want to eat out there when he gets home tonight because it will be cooler outside than inside. I plan on taking the tabletop oven out and bake our meal outside so I'm not adding more heat to the camper.
Barney Is OCD about his ball this morning. He would not put it down for just about any thing. When he did put it down Macon snatched it up and ran to the end of his line with it with Barney right behind him. Macon didn't put it down until a bug flew past and when he snapped at the bug, the ball dropped and Barney got it and ran the other direction with it. He "hid" behind the camper from Macon so he could keep it. Rocky was watching the whole thing. When I brought the dogs back into the camper, Barney started picking on Rocky. I would tell him to stop and he would, for a minute. Then he would got at it again. Rocky went into his kennel, knowing that's his safe place and Barney went in with him, Rocky came out, Barney came out Rock went back in and Barney went in, this time when Rocky came out, I shut Barney in an Rocky looks at me and gave out a huge sigh.. like he was saying "At last, peace". (Ha ha) new the dogs are all laying in the living room floor, under the fan that I got out of the van and is going back and forth.
From the kitchen... Since it's going to be in the mid to upper 80's today, I think I'll take the table top oven outside and fix shake and bake (home made) Chicken strips and baked potatoes. of course we will have our Salad,. Dessert will be peanut butter on crackers covered with chocolate for Jerry. I think I'll have some sugar free chocolate ice cream.
I am hearing... I talked to Beth this morning while the dogs were out. She is all excited about moving and has been packing up. She could get everything out in one day, if they rented a truck and they can find someone to help with the large and heavy items. Wouldn't it figure, "L" just put up a set of shelf's and a thing for the TV. in the last couple of weeks.
I am wearing... dark gray cut off sweat pants (shorts) and a blue flowered top.
I am reading... The Bible, Bible ( Leviticus 25 ). Emails, A guide for World of Warcraft. and I hope to read more of the Dragon book I bought a few days ago.
One of my favorite things... Talking to Beth each morning. We do a lot of talking about the small things that come to mind.. she really likes telling me about Heather and the things that she goes or gets into. I tell her about the dogs (my "kids" now) and we help each other with house keeping. We both don't like doing dishes, but she will call me when she starts doing hers and before she knows it, they are done. If I have already run the dish water and letting some soak, when she calls, I wash them up and soak some more. If it's not the dishes, it's making the beds or picking up stuff from the floor.
I started a new group..

5 Ingredients Fruitcake

 
5 Ingredients Fruitcake

2004
1 lb chopped Dates
1 lb Walnuts or Pecans, chopped
1 can Eagle brand Milk (Sweetened Condinsed Milk, 14 oz)
1 lb Coconut
1/2 lb Candied Cherries, cut in half.
MIx all 5 ingredients together and cook in loaf pan or deep round pan. Cook in slow oven (325F) about an hour

Mexican Corn Bread

Mexican Corn Bread

1 lb Hamburger Meat
8 oz Cheese
1 can Creamed Corn
3 Jalapeno Peppers
1 Onion
1 cup Buttermilk
2 Eggs
1 cup Corn Meal
 
Brown Hamburger. Mix cornmeal, buttermilk, eggs, corn, and Peppers. Pour half of the batter into baking dish. Then layer hamburger, cheese, and onions in middle and pour remainng mix on top. Bake at 350F for 50 minutes.

Howdy....

Howdy.... I hope you have had a good night. Jerry has to work today, so I was up early. I made Jerry his breakfast and took the dogs out. I came in and, not surprising at all, there isn't much to watch on the TV at this time of the day (5 AM) So I am watching some shows I've recorded.
(7 am) The Sun is not up just yet, but there is enough to be able to see well outside. I love pre-dawn, when the day is just waking up and starting.
Jerry will only have to work 8 hours today..He'll call me just a bit after 3:30 but it will take him almost an hour to drive home. We will eat out this evening, Do the shopping and, hopefully, get the laundry done, as well. we don't have a lot but with rumors of his having to start working 12 hours a day, 7 days I don't want to go three weeks again before I can do the laundry again.
Today's forecast is for another wonderful Spring day with temperatures close to 70F, Sunny and Breezy. I love days like this and I plan on being outside for part of it. Or course I'll take the dogs out for their morning potty and romp, but I want to take a walk down to the lake and maybe toss in some bread for the fish and or geese and ducks I see on the water from time to time. I think I might invest in some worms soon and get a line wet a few times.
Stripes slept in the house last night. He stayed curled up at my feet all night long. What was funny is, he refused to move off the bed when I told him to move. so I moved my blankets and the sheet and he managed to stay in his spot. When I got in Bed, I covered him up and he went down to my feet then back up to the top of the bed, under the covers before he figured out how to get out from under the covers. He then slept at my feet all night long. I covered him with my jacket when I got up and he stayed under it, until after I got up put of bed.. He then "demanded" that he be let outside before I did anything else. (typical cat)
I downloaded an Anne McCaffrey and Son book. "Dragon's Time". I'll start reading it while the dogs have their play time today.

Howdy ... April 3

Howdy.... I hope you are doing well. if you read yesterday's post, I woke up not feeling so well. Today is a much different day. I have all but caught up with my house work.. At least the back half of the camper is cleaned up and I've got the dishes soaking and I've taken the dogs out a couple of times (it's 4 PM) The second time was almost an hour.
 
I let the dogs play, then we did some training, then I put Rocky and Macon in the camper and I took Barney for a walk down to the lake. While we were at the water, The lady with the three white dogs came out and took her dogs around to the lake she kept her dogs far away and I kept Barney on short lead and told him to "sit" which he did and "Stay" which he did, until she got past and spoke to her dogs.. He got a little hyper, thinking he was being called to join them but when I told him that wasn't going to happen, he looked up at me as if to say.. "Why Not?" and didn't give me any trouble about returning to the camper.. it would be so much easier if It wasn't up-hill and I keep getting out of breath every few feet. I am so out of shape it's not funny.. someone, please ask me around 4 PM if I've taken my walk yet, I really need someone to help me keep walking!!
I am surprised that none of the cats went with me to the lake. I guess they all figured I wasn't going far... and I had Barney with me, as well. .. He don't hurt them, he just pins them to the ground and licks them until they are wet, then lets them go. They don't like that too much. I have taken to putting dry cat food out for the cats in the mornings again. When it got cold, They were not losing weight, but now that it's warming up, they have all lost a bit of weight and they need the extra food for a little while. I put the water off the can of Mackerel I opened over the food and let it soak in, before I took it out. They loved it cause there was none left when I took the canned food out and put it on the table for them.

.I folded three tubs of laundry this morning, and found out the jeans were still just a bit damp, so I put them on hangers and hung them between the bedroom and the kitchen door ways to finish drying. That took about 3 hours for them to feel dry.
I do need to get a box into the mail to Beth soon as it has a spring dress in it for her daughter and some baby spoons that she needs. It looks like Jerry may have to work both Saturday and Sunday this weekend... So I'll either have to pay extra for it to go Fed ex from Office Depot or wait until Jerry gets a day off.. of course, if he gets rained out on Friday (which he might) I will send it USPS.

Outside my door ... It's beautiful. It's on the cool side but the sun is shining and that helps warm the camper up nicely. So nice that I have the door open and one of the vents open.
From the kitchen... When Jerry called that he was on his way home from work yesterday, I asked if he wanted the steaks. I asked because he's not been feeling so well and steaks are not what he wanted to eat. He said "Not really" So I suggested the hot dogs we picked up over the weekend and he said that would be better. I made him is favorite comfort food, Mac and Cheese to go with hot dogs. I also made salads and I always make salad for our meals. I add more to my bowl of salad than what I put in his. He just wants the lettuce, tomato, green pepper and cucumber and maybe some carrot and radish.. I like much more... yesterday, I added 5 olives, and a handful of fresh spinach to mine as well.
I am hearing... (4 PM) I have USA's NCIS on right now, and it will change over to the local news at 5 PM.
I am wearing... brown Sweat Pants, a white T-shirt that has blue and red dye splattered all over it.
I am reading... emails and the bible (one chapter at a time) and I hope to read the directions on my top pattern tonight. I didn't get to that yesterday like I wanted to. I'm in no hurry for that.
I am thankful for... Another "Nice" day to sit outside for a while with the dogs. I'm sure they enjoy their time out, I know I do.
I am hoping... That Jerry does not have to work Sunday.
I am creating... A clean home and happy dogs.
One of my favorite things... sitting outside watching the dogs play with each other.
A few plans for today... (PM) I plan on cleaning off my table (again) so I can pin and cut out my top I want to make
A few plans for the rest of the week... make the top mentioned above and work on some cards on Friday.

Howdy... April 2

 
Howdy.... Jerry stayed home from work yesterday, not feeling well at all. He hasn't been feeling well for a few days but he said he felt a bit better and is in hopes of feeling better as the day goes along. Now I think I have it. Corbin wasn't feeling well when we saw the grandkids two weekends ago and now I'm wondering if we have what ever it was he had at the time.
 
I think Spring is hiding again. It's sunny but cold outside. I had to wear my coat to take the dogs out at 10 am. They did what they needed to do then ran back to the door to be let back in. They all but pulled me back to the door to be let in. The cats were hiding under the camper and as soon as the door was opened they jumped inside even faster than the dogs could move. Hopefully this is the last cold spell. I don't mind cool so much but I don't like cold
 
Yesterday was April Fools day, Did you pull any pranks on any one? My hubby didn't feel well at all yesterday so I didn't try to come up with anything...

I guess the best "April Fools" we ever had was the year our older daughter was born. I just didn't want to wake him up too early just in case I wasn't in labor.. but it's a good thing I did wake him up. Because if I had waited much longer and he had gone off to work, I would have had her at home. Funny thing is, a stray cat had kittens under the bedroom in the crawl space about the same time I realized I was in labor... and I kinda poked Jerry and told him "Honey you have to wake up I think we have a couple of problems... First off, a cat is having kittens under the house"
His response was ". Humm???"
and then I said "I think I'm in Labor."
after I unburied myself from under his blankets from where he had tossed them on me, I told him. Because David was induced I wasn't "for sure" but fairly sure.. Okay.. let me go get Kathy ( family friend) to drive us to the hospital. (she had 7kids, only one set of twins) Her second to oldest girl asked if she could come along and Kathy said yes. We found out later she was 7 months along (I swear she never showed)
We get to the hospital and the first real pain hit and I knew for sure. A couple of hours after that, Heather was born.

The closest I've come to "Making a Garden" this year is I bought some flower pots and gave them to my Grand Daughter in Tennessee. I just don't even feel the urge to put seeds in the ground this year. That is so strange for me because I'm usually wanting to plant something before then end of February.

Outside my door ... Well, it's warmed up enough I can open the door for a while. The sun is shining and that always helps to warm up the camper.

The Dogs ... We have new "neighbors" and they are moving tool boxes from one truck to another and the dogs are watching though the door.

The Cats ... are hiding from the new people and when they think I'm about to open the door meowing for me to open it. It will soon be time to feed them.

From the kitchen... I had planned on steak and potatoes yesterday but it turned into a forage in the fridge (FoF) night, instead.. So, tonight will be salad, steak and potatoes.

I am hearing... I always have the T.V. on.

I am wearing... light gray sweat pants I found in a tube in the closet, a faded black top, and one of my sweat shirt turned into a light jacket.

I am reading... Bible (Leviticus 17) 11. speaks about how the life of flesh is in the blood .. for it is the blood that makes atonement by the life.

I am hoping... that Jerry starts to feel better today. I started off not feeling so well myself but as the day has progressed I have been feeling better.

I am creating... a Spring/Summer top

One of my favorite things... Taking care of my home and knowing that Jerry appreciates it.

A few plans for today... My plans for today are to get out my material and start a top for me. I should have done this weeks ago.

Sweet Potato Biscuits

 
Sweet Potato Biscuits

"From Our Home to Yours"

Ozark First Church of the Nazarene"
2004
1 Cup All-Purpose Flour
3 teaspoons Baking Powder
1/2 teaspoon Salt
1 cup Cooked Mashed Sweet Potatoes
4 Tablespoons Butter or Margarine
1/2 to 3/4 cup Milk
Mix flour, salt, and baking powder. Cut in butter and sweet potatoes. Add enough milk to make a dough firm enough to roll out and cut into biscuits. Bake on greased baking sheet at 400F for 20 minutes. Brush with melted butter and serve.
